Spiced Carrots

Ingredients:

  • 10 large carrots – try orange, purple and white for a colourful plate
  • 2 tbsp coconut oil
  • 2 tbsp fresh oregano
  • 2 clove garlic
  • 1tsp smoked paprika
  • 1/2 tsp ground nutmeg
  • 1 handful of pistachios

Directions:

1) Preheat oven to 230 degrees celsius
2) Cover carrots with a thin layer of coconut oil, oregano, paprika, nutmeg and diced garlic cloves
3) Roast for 1 hour until tender
4) Place on patter and garnish with pistachios
