Chicken Hummus & Pickle Pitta

Cook Time: 10 minutes

A simple and quick lunch option that packs a big crunch.


  • 350g of chicken breasts
  • Small teaspoon of cooking oil
  • 80g of spring onion
  • 20g of spinach
  • 30g of cherry or plum tomatoes

Pickle Ingredients:

  • 40g of red onion
  • 125g of cucumber
  • 60ml of rice wine vinegar
  • 15ml of water
  • Sprinkle of sugar
  • Small piece of star anise
  • 1 bay leaf
  • Small teaspoon of coriander seeds


For the pickle: Thinly slice the red onion & cucumber and place with all ingredients into a pan. Bring to the boil and then remove from the heat. Season generously and allow to cool.

Slice the chicken and lightly season. Place in a pan with a little oil and cook for around 4 minutes. Turnover and again cook for a further 4 minutes. Keep turning until you see the chicken is cooked through.

To Serve:

Slice the pitta bread to create a small pocket and coat with hummus. Add the salad, chopped tomatoes, chicken and pickle to serve.
